This batch of pods 16-18 cm from the production in 2012 will be presented to the AMC in early 2014 and is currently refining since last year (2012). Frost does not appear yet fully, but the first crystals are visible on the outside of the pods and analyzes show that the content of vanilla will be even greater than for the 2011 harvest.
You, being patient as we have time to see and enjoy this slow transformation. However, the pods are already excellent and can be used now. The vanilla planifolia are generally consumed in the year following the harvest well as the tendency of producers is to reduce the ripening period to 6 months.
This vanilla planifolia New Caledonia into the classification of grands crus and actually pushes the pedestal of Bourbon vanilla reference and Reunion in the Indian Ocean!
Our prediction for 2014: Probably a silver medal! It is still too early to predict the gold medal but all expect the end of 2013 to share our opinions! Siver medal in 2014 !
The play value of this excellent vanilla is power, like a fine wine listed, follow the smell and taste changes. We must be patient!
Note to use 1/3 pod 16/18 cm is enough where we usually use a whole vanilla pod for desserts.
