Hot chocolate mix


- 2/3 cup sugar
- ¼ cup blanched almonds
- ½ cup cocoa
- 1 vanilla pod split lengthwise
- ½ teaspoon powdered instant coffee
- 1 teaspoon cinnamon
- 100g powdered skimmed milk


Mix the sugar and the almonds in an electric blender until you obtain a smooth mixture. Scrape out the seeds of the vanilla pod and add them to the mixture. Then add the cocoa, milk, coffee and cinnamon. Mix the whole for about one minute. Keep it in a bowl. This mixture can be made several days ahead and serves about 4 cups.
